The term "food safety" is understood by reference to those hazards that may make food injurious to the health of consumers. The Government of the Czech Republic 10 December 2001 accepted Decree No. 1320 concerning "The Food Safety Strategy of the Czech Republic" This strategy is based on the legislation of EU and on Regulations 178/2002/EC. Risk assessment metod is used. Mycotoxins are very toxic chemical compounds produced by molds, which can have important consequences in human and animal health. Limits for TDI are discused. Good agricultural practice (GAP): means the nationally recommended, authorised or registered safe use of plant protection products under actual conditions at any stage of production, storage, transport, distribution [and processing] of food commodities and animal feed necessary for effective and reliable pest control.
