摘要
The structure of starch granules of potato tubers is studied by wide and small angle x-ray scattering methods. Fresh potato slices are used for direct screening of semicrystalline starch in native form. The changes in the crystallinity and the average size of the crystallites of four potato cultivars (S. tuberosum) during the winter storage are studied, The effects of humidity and several drying processes on the structure of starch granules are also discussed.
