Meat as a source of selenium in human nutrition

The objective of this study was to estimate the content of selenium in meat and viscera of slaughter animals in the Czech Republic and to monitor the response of young cattle to feeding on concentrates. Simultaneously, attention was paid also to ratios of selenium concentrations in both sexes and in individual tissues. Another part of this study deals with contents of selenium in muscles of young cattle and pigs. The study in general deals with the concentrations of selenium in meat because it may contribute to the solution of a sufficient supply of this element into the human organism.
