Interest in insects as novel foods is also growing in Europe. While about a quarter of the world's population traditionally consumes insects, the first insects to be approved as food in the European Union were mealworms in 2021. The male larvae of the honey bee, the drone brood, are also considered edible insects with great potential. Due to beekeeping measures to control the bee parasite 'Varroa destructor' (varroa mite), the accumulating drone brood has so far mostly been disposed of. Due to its nutritional composition and its positive sensory properties, it offers many options for use as food. This review article summarizes the information on current and potential uses of drone brood as food as well as the associated risks.
