摘要：
In the article it is investigated the potential of honey discrimination by using 3 optical methods fluorescence spectroscopy, refractometry, color measuring. Samples from three types of honey (acacia, linden, and honeydew) are measured by a fluorescence spectrometer recording emission from 350 to 800 mu with excitation at 370, 395 and 405 nm. Color parameters are determined in two different colorimetric systems, pigments and water content are also obtained. The objective of this study is to explore the potential that three-dimensional fluorescence spectra (3DFS) technique can be used to detect quality of honey.
