摘要
The article examines technologies for processing a low-grade raw material generated in industrial processing of poultry that is unfit for use (non-standardised), working on the basis of a biocatalytic approach using microorganisms and their enzymes. The technologies developed make it possible to reduce the oxidative spoiling of the mechanically deboned poultry meat, to increase the degree of animal protein extraction from the animal carcasses, to reduce the volume of production wastes and possibly to expand the range of goods produced by Russian meat-processing plants.
