Hydrocooling is used for initial precooling to prevent recently harvested fruits and vegetables from wilting, shrinking and losing flavor. The boxed product is placed on a conveyor that pushes the boxes through a cooling tunnel. Using hydrocooling with water can lower the product's temperature. This has several advantages, including lowering the refrigeration requirement in the individually quick frozen (IQF) tunnel by 20% to 30%, reducing the cost to freeze, and providing a quality frozen product.
