摘要
The sterilization method using a high electric field pulse is attracting attention as a new sterilization technique for liquid foods because the method does not change the nutrient of liquid foods. Many researchers reported that high electric field pulse application killed a lot of types of bacteria in liquid foods. In the process of alcoholic beverages (Japanese sake), non-thermal sterilization is wildly used to get good quality. The high-temperature changes the smell and composition of alcoholic beverages. In this study, the targets of sterilization ware Escherichia coli and Saccharomyces cerevisiae. We studied the effect of ethanol concentration on the killing of Escherichia coli and Saccharomyces cerevisiae using high electric field pulse application.
