Integrated fish/pig systems:: Environmental feature and fish quality

Samples from common carp (Cyprinus carpio) muscle and water from three fish ponds fertilized with pig manure and one where the fishes were fed with commercial ration, were analyzed for a period of six months. The objective was to observe the incidence of pathogenic bacterial, such as Salmonella, Staphylococcus aureus, total and fecal coliforms, in fish sold in natura in Chapeco county, Santa Catarina. Dissolved oxygen, pH, turbidity, total alkalinity, total hardness, ammonia, nitrate and orthophosphate, total and fecal coliforms were monitored at each 15 days in the water from the four fish ponds. Bacteriological examination fulfilled in all samples from fish muscles evidenced absence of Salmonella in all samples. Others microorganisms count maintened in all samples lower than the maximum limit number admitted by present legislation. The fishes analised were suitable for human consumption, because them attend the standard recommendation by the National Division of Food Sanitary Vigilance (DINAL). Comparation between fish ponds fertilized with pig manure and fish pond fertilized with commercial ration for fish showed no significant difference for the variables: dissolved oxygen, turbidity, total alkalinity, and ammonia. The organic matter was responsible by the high values, excepted for turbidity, that was lower for the fish pond fertilized with commercial ration for fish. However, after all physical-chemical and micobiological analyses of water of the fish ponds, it was conclude that all fish ponds were classified in the 11 or III class of the inner water classification stated by CONAMA.
