摘要
Modern society is characterized by the high consumption of different products, including food. The school canteens are an example where this reality is verifiable, translating into an increase of food waste. In this study is intended to analyze the food waste produced in the canteens of the Polytechnic Institute of Coimbra, through the analysis and description of its percentages, assessing the level of satisfaction of users with the quality of the meals and services and the evaluation of level of good practices about the hygiene and food safety of the food handlers. The results reveal satisfactory levels concerning the users' satisfaction with the meals and services of the canteens. The food handlers revealed good levels good practices, being these levels higher in the individuals with training in hygiene and food safety. The waste percentages, data obtained showed values above those recommended (3% the food surplus and 10% the leftovers).
