摘要
Atomic force microscopy was used to investigate the nanostructure of zein from maize (Zea mays). In aqueous ethanol solution zein exists as small globules with diameters between 150 and 550 nm. The mechanism of zein film formation was also explored. The characteristic film structure consists of a meshwork composed of doughnut structures formed from asymmetric rods joined to each other.
