摘要
The present work evaluated the use of Agave cocui vinasse as a culture medium for the growth of Saccharomyces cerevisiae, for obtaining Pecayero cocuy. The experimental approach used to measure the effect of culture media and yeast strains on growth of Saccharomyces cerevisiae, where the response variable, the optical density (OD), was based on five levels set for the crop medium factor (0, 10, 20, 30 and 40% vinasse); represents zero SDB reference medium; three levels for factor strain (ATCC 49-21, and Sc.VINAZA UNEFM-16) with two replicates, for a total of 45 experimental units. A statistical analysis comparing several samples was used, using the statistical program Statgraphics Centurion XV, thereby allowing for more significant factors on the response variable. The growth of different strains of Saccharomyces cerevisiae, is favored among medium MSB and 40% vinasse, that provides the requirements for growth of these organisms. The differences between the phases of latency for each strain in different media show that the Sc. VINAZA performed better in most ways.
