In order to establish the frequency of Salmonella spp. incidence in carcasses and internal organs, 156-hunted wild boar were examined in the period from November 1997 to February 1999, The animals were taken from 47 gammon purchase points located in north-eastern Poland. The age of the examined animals ranged from 3 months to 5 years, with the majority of one-year-old animals (29.5%) as well as two-year-old ones (23.7%), For the purpose of examination, muscle tissue, lymph nodes, samples of liver, kidney and spleen were taken. The examination of the incidence of Salmonella spp, was carried out in accordance with the Polish standard, with minor modifications. In addition to this, the examination of medicine immunity of the isolated strains was carried out. The precise definition of the serovars of Salmonella strains was formulated by the Polish National Salmonella Centre as well as WHO Collaborating Centre for Reference and Research on Salmonella in Paris. Salmonella spp, strains were isolated from 11 animals (7%), including one strain isolated for the first time in Poland (S, enterica subsp. enterica serovar Bardo, S. Bardo), The obtained results show that venison meat should be stored and distributed in cooling conditions at purchase points and processing plants. Such conditions will prevent the excessive proliferation of Salmonella spp, in wild boar meat, as well as the intoxication and infection of the food passage system.
