Compositional and Nutritional Studies on Tomentosa Cherry (Prunus Tomentosa Thunb.) Fruit

摘要
The chemical composition and nutritional value of Tomentosa Cherry (Prunus tomentosa Thunb.) Fruit were determined and evaluated. The fruit contains sorts of vitamins, such as carotene, V(B1), V(B2), Vc, V(D), V(PP), and V(E) etc. Mineral elements and trace elements content of Ca, P Fe etc. are higher than other fruit, obviously. Among them, Vc and Ca content are high (63.5mg/100g and 1.607mg/g) which were 2-30 times and 10-80 times of general fruit, respectively. Tomentosa Cherry (Prunus tomentosa Thunb.) fruit contains 17 sorts of amino acids. Essential amino acids account for 979.9mg/100g, making up of 49.2% of the total amino acids (1992.5mg/g). On the other hand, the resource conservation, product research and utilization of Tomentosa cherry were discussed.
