摘要
Wheat grains were milled into 4 fractions ranging from the surface layer to the centre of a grain, named as seed capsule, aleurone layer, outer endosperm and inner endosperm respectively. The ethanol extracts of those fractions ware prepared and employed to determine their antioxidant activity. It was found that the total phenolic content in the extract of the aleurone layer is as high as 18.240mg-GAE/g, which was significantly higher than those of other fractions. And the extract of the aleurone layer shows the highest antioxidant activity. The results suggested that the aleurone layer from milling process has important benefits to human health.
