摘要
Experimental investigation of the process of beer production was carried out and four experiments of continuous beer fermentation with immobilized cells of yeast strain Saccharomyces cerevisiae Safbrew S-33 were realized at different values of the dilution rates under laboratory conditions. A process model, describing the dynamics of the main process variables using experimental data was developed. For monitoring of the biomass concentration and the process kinetics, model-based software sensors were designed using available measurements for extract and ethanol concentrations. Their performances were investigated by simulations using the biochemical model as a real object.
