摘要
Specific heat prediction regression equation was developed for food materials as a function of moisture content. Specific heat data of food stuffs as a function of moisture content is one of the foremost property required to model process in which mass and energy are exchanged. It was assumed that temperature has a negliable effect on specific heat. Specific heat predicted by present empirical model are close to experimental results than obtained from other models cited in the literature.
