Microwave induced conformational change and aggregation of bovine β-lactoglobulin: An insight to non-thermal effect

摘要
Recent studies comprise detailed comparative studies on thermal and microwave induced non-thermal conformational changes at the secondary and tertiary level of structure of beta-lg to ensure the non-conventional heating can produce a non-thermal effect with analogous thermal range. Both the fluorescence studies and circular dichroic studies revealed the conformational changes of beta-lg SDS-PAGE study was carried out to identify the higher oligomer and the isocratic-HPLC was used to characterize the oligomer/aggregates. Morphology study with the help of FE-SEM technique was successful to identify the sphrerulitic oligomer formation during the aggregation pathway. In fact conformational change related neurodegenerative disorders such as amylopathies including Alzeimer's, Parkinsons and Creuzfeld-Jakob diseases could be envisioned in the view point of microwave induced conformational changes leading to the protein aggregation.
