摘要
The sensory and phenolic profiles of Cabernet Franc winesfromdifferent geographical indications (GIs) of Mendoza, Argentina, werestudied for the first time. Different statistical methods showed thatit is possible to discriminate wines of different GIs by aroma andtaste descriptors. In terms of phenolic composition, anthocyaninsshowed higher relative concentrations in Gualtallary wines (GUA),the GI located at higher elevation (1450 m a.s.l.). The classificationof GIs at the levels of sensory and phenolic profiles was relatedto the effects of the climate on the Cabernet Franc grapevines. Adegree of relation between both groups of variables (phenolic compoundsand sensory) was found by multifactor analysis (MFA). Malvidin anthocyaninderivatives were associated with descriptors such as astringency andearth, while total acetylated anthocyanins were related to the descriptorchocolate. The results are of interest to the wine industry in termsof knowledge of the influence of the origin of wines, but also togive consumers more information at the time of purchase of a givenproduct.
