摘要
Preface Tea (Camellia sinensis) is inseparable in daily human life for its enjoyment of taste,flavor,and health benefits.The science behind the health benefits has drawn plenty of attention,and significant progress has been made in elucidating its plantation,processing,phytochemistry and biological activity.Yet,due to tea’s polymorphism and polymolecular nature,more study of tea is needed on its chemicals and chemical change during processing,and,in particular,the association of tea’s chemicals and processing-induced changes with biological activities and human health.
