Chlorogenic acid is an important secondary metabolite in plants. It is ingested by human body in the form of dietary polyphenols. Coffee is rich in chlorogenic acid, which can reduce the incidence of many chronic diseases showed by epidemiological study. In this paper, the bioavailability of coffee chlorogenic acid and its isomers was analyzed, and the research progress on antioxidant activity of chlorogenic acid at home and abroad was reviewed from three aspects of chemical, cellular and animal experiments. © 2019, Editorial Office of Journal of CIFST.
