摘要
Several analytical methods, either manual or automatized, have been applied to the evaluation of the enzymatic potential (surgars and protein methabolism) of a large basis of different genera and species of thermophilic lactic bacteria and mesophilic streptococci, Leuconostoc, propionibacteria. The results showed a relative satisfactory homogenity for species with sometimes individual marked fluctuations. This study was carried out for a better control of the stability of different lactic strains currently used in dairying.
