摘要
The alcohol insoluble substance (AUS) of the carrot is a multi component substrate well suited to revise the mode of action of pectic enzymes. It is storable for years and enables therefore comparable investigations of enzyme preparations within long periods. Hydrolysis of freshly homogenized carrots and AUS reveals extensive conformity in the kind of hydrolysis with different enzyme preparations in dependence of their effective main and by- activities. The used substrates (homogenized carrots and AUS) differ in their relation of water soluble acid to neutral saccharides. This has little influence on the find results.
