PHOSPHORUS AND PHYTIC ACID DISTRIBUTION DURING SOY MILK PROCESSING

摘要
Soybean used as raw material for soy milk production had 68.4% of the total phosphorus as phytic phosphorus, 7.5% as inorganic phosphorus and 24% in other forms of organic phosphorus. Soy milk had 68.1% as phytic phosphorus, 11.3% as inorganic phosphorus and 20.4% in other forms of organic phosphorus. During hydration there was a reduction in phytic phosphorus content, both by diffusion into the hydration water and by hydrolysis by the endogenous phytase. Distribution of the phytic phosphorus after extraction of the solubles was 58.4% in the soy milk and 41.5% in the solid residue.
